New study is wake-up call for diet soda drinkers…..(noooo!!!!)

Well, I have stated many times that I have banned Diet Coke and aspartame from my house. The truth is, my Diet Coke habit is really hard to kick. WHY?

I have free-range meats and eggs. I have healthy organic cereals, organic fruits and organic veggies. We have organic milk, orange juice and yogurt. In the middle of it all is a Diet Coke. I know it lacks all common sense, but at least I am being honest. I love this stuff!

The only good news is that I only have one Diet Coke a day. When I was teaching, I could easily drink five cans a day. So, I guess that would be considered progress. I really want to kick this habit for good! A recent article has given me more reason to to quit drinking this stuff and giving it to my kids!

ADHD and the PESTICIDE CONNECTION

In the mail today, I received my latest copy of Publix GreenWise Market Magazine. It usually contains great articles on eating healthy and coupons. Best of all, it’s FREE!

The Summer 2011 issue has an interesting article on the connection between ADHD and pesticides found in food. The article is not available on the Publix website yet, but I did find a similar article highlighting the same study:

Our Backpacking Trip

My hubby and I used to go backpacking all the time in our B.C. days (before children). We have taken our kids camping many times, but never backpacking. We just returned from taking them on their first backpacking trip. It was a wonderful way to spend time with family!

We had an absolutely wonderful time! We plan to go back soon and often.

Eating organically for a backpacking trip was a little bit of a challenge. Most of our meals only required hot water to make. We used the MSR Whisperlite International Liquid-Fuel Stove to heat our water.  I had an old kettle that we used to heat a bunch of water at once. I found a kettle that I have put on my camping wish list. The GSI Outdoors Halulite Tea Kettle only weighs 32 5.8 ounces. I am so getting that for Christmas! Well, maybe I will talk the hubby into getting me one sooner! HINT HINT HUBBY!

Since we were backpacking, we weren’t able to carry our own water. This was our first time using a water filter. My 12 year old son was in charge of pumping all the water we needed (with a little help from sis). I must say, he did an awesome job! The MSR SweetWater Microfilter was easy to use and pumped water fast! All of the water came from the creek near our site.

For breakfast, we had an organic bagel,  Nature’s Path Organic Instant Hot Oatmeal,  Organic Strawberries and Mount Hagen Organic Instant Regular Coffee.

For lunch we kept it simple with Justin’s Nut Butter Organic Classic Peanut Butter Squeeze Packs, Back To Nature Organic Saltine Crackers and Golden Valley Natural Organic Beef Jerky, Original.

For snacks, we had Eden Organic Wild Berry Mix andAnnie’s Homegrown Organic Snack Mix.

Dinner was a new experience for us. This was our first time eating freeze dried meals. To our surprise, they were tasty! We were cold and really wanted a nice warm meal. These meals hit the spot! I had Mountain House Lasagna With Meat Sauce. I loved it when my daughter said, “It looks like lasagna and it smells like lasagna”. LOL! She is too cute.

We weren’t able to find organic dinners from this company, but they do have Mountain House Organic Strawberries and Mountain House Organic Bananas Freeze-Dried Fruit Snacks.

Even though I wasn’t able to pack all organic food, I was proud of what I did pack. Sometimes it’s just about balance. I try not to stress out when my organic world is not perfect.  Almost perfect is sometimes good enough!

Organic Peanut Butter Beat Skippy PB in Taste Test!

I found a great article today on a recent Peanut Butter taste test. We’ve had some disagreements over organic peanut butter in this house. Some organic peanut butter is too dry and others are too clumpy. I really need a great peanut butter, so I was sure to check this out!

Number one in this taste test was Santa Cruz Organic Creamy Dark Roasted. I will admit  that I have never tried this brand. I’m not sure my local Kroger carries it, but I did find it here.

The test taste participants critiqued the peanut butter as : “Pretty color, good nutty flavor”; “Best! Champion”; “Yum! Salty, tastes like real peanuts, not sweet”; “Nice strong roast flavor” ; “Great texture and flavor”.

It’s that texture part that got my attention. I can’t wait to try it with my homemade strawberry jam on some baked bread!

Organic Beer Making for Father’s Day

I am spending a little time online tonight looking for a Father’s Day gift. My hubby mentioned  he wanted to brew his own beer. So, here I am trying to figure out what in the world I need to buy for beer making.

Give a man a beer, waste an hour. Teach a man to brew, and waste a lifetime!

I was really surprised to find organic beer making kits online. I was able to find an Irish Stout Organic Beer Ingredient KitPale Ale Organic Beer Ingredient KitIndia Pale Ale Organic Beer Ingredient Kit and a 7 Bridges Red Ale Organic Beer Ingredient Kit.

It might seem strange to give my hubby a beer kit for father’s day, but I doubt he wants a tie.

Now I need to get the beer making equipment. The Gold Complete Beer Equipment Kit (K6) with 6 Gallon Glass Carboy seems to have everything I need. What do I need now? Bottles? Caps? Here are a few other things I am thinking about:

Summer time in the South usually starts in April.  By June, it’s so hot the birds have to use potholders to pull worms out of the ground!

Ice cream usually does the trick when it comes to scorched whiny kids. Unfortunately, organic ice cream is difficult to find and is VERY expensive. To solve this problem, we make our own ice cream.

We use the Maxi-Matic EIM-502 Elite Gourmet 4-Quart Old-Fashioned Pine-Bucket Electric/Manual Ice-Cream Maker. The recipes included with the ice cream maker usually call for half and half or heavy cream. Milk and chocolate are also common ingredients.

All of these items can be bought in organic version at the grocery store. The half and half and heavy cream are made by the Horizon company. Sometimes they have coupons and these items usually can be found on sale.  Organic Valley also offers coupons on their dairy products. The expiration date is usually over a month, so I stock up when they go on sale. I also love to add fresh summer fruit from our farmer’s market trips. Don’t forget the chocolate!

You can also find other great recipes for ice cream. Ben & Jerry’s Homemade Ice Cream & Dessert Book has easy recipes with ingredients that can easily be found in organic form.

I have already saved enough money making my own ice cream to justify the purchase of the ice cream maker. It is also a great way to spend the day with the kids! Fourth of July is always better with homemade ice cream!

Memories with your children are priceless. Sadly, I lost my grandfather this weekend. As I wrote this post, I remembered sitting in his shed watching him make homemade ice cream. I remember him telling me not to put the rock salt in my mouth. I can still remember the grin on his face when I refused to listen. Love you gran gran! Miss you already :(

We also found a great KICK THE CAN ICE CREAM RECIPE in  Camp Out!: The Ultimate Kids’ Guide. This is a great book (at a great price) that is packed full of kid’s activities. My kids put fluorescent  colored post it notes on the pages with activities  they wanted to do. It took an entire pack of post it notes and it’s now a fluorescently bright book! LOL!
